Made with frozen strawberries, cane sugar, and lemon juice.
Makes: 2+ large Mason jars (Double batch)
- 12 cups of frozen berries (one full 2 kg bag of strawberries)
- 4 cups of cane sugar
- 4 tbsp of lemon juice with lemon oil (not from concentrate) Italian made Limmi brand
Added all ingredients at once, brought to a boil (level 5).
Then simmered on level 2.4 for about 40 minutes. Jam didn’t spit and spatter, because it was at a lower temperature.
Update (May 2022): I made a large batch (4kg of berries) and added 3 cups of cooked rhubarb. Dena said that it tastes just like pie filling.
I used 32 oz (1 litre) wide-mouth Mason jars.
Fill jars while the jam is still hot. Allow to cool on the counter, then put in the fridge.
Next Time
- I might need to simmer longer to reduce the water content and help it thicken up.
